Hugo Ortega , co-owner of Alta Pavina with his brother Diego, says that with this blend they sought to "evoke the wines of the Ribera del Duero, which were the first ones we knew and with which we grew up."
The freshness and acidity provided by the altitude at which the vineyard of origin is located, together with the intensity of the Cabernet Sauvignon, give it a very particular character marked by complexity and balance .
The 2019 Pago la Pavina was produced with a blend of 80% Tempranillo and 20% Cabernet Sauvignon and displays a pale color and a delicate nose that is faintly balsamic and peppery. It has a medium body and fine tannins, coming through as balanced and with unnoticeable 14.5% alcohol and integrated oak after spending 14 months in French and American oak barrels. 38,000 bottles produced. It was bottled in June 2021.
